 Twin arm mixer or “Double arm mixer” is mixing through linear motion similar to baker hands in manual mixing. Twin arm mixer is recommended for soft dough especially for confectionary. One of the important advantages of this mixer is ventilating the dough (allowing air to go through dough), which helps in dough rising during fermentation stage.
