Salamander has the same idea like broiler; both have an overhead heating element. The difference between salamander & broiler, that broiler cook raw food while salamander main function is heating cooked food surface for serving hot plates, top cheese melting, meat steak browning, etc, in addition, salamander can cook foods but it is not its main function. Salamander is manufactured as counter top equipment, suitable for restaurants (especially fast food), central kitchen in hotels, hospitals, etc.
