Food preparation equipment function is to process the food to make it ready either for cooking or for eating.
In large central kitchen in a hotel or a hospital & similar, there are separate preparation areas for different types of foods. Each area has its own equipments, (in addition to General preparation equipments). The most common preparation areas are:
sometimes meat, poultry preparation can be included in one area, also, number of preparation areas can be increased (e.g.; sauce preparation area, salad preparation area, fruit preparation area, etc.), this is affected by several factors such as kitchen capacity, available space, each food type capacity & rate, etc.
